Stone-fruit and Berry Scone

This super simple scone recipe is nutritious, made with simple ingredients you probably have already at home, is refined sugar free (and only 2 tbs at that!) and can be adapted with whatever fruit is in season. Filled with gut health goodies, spices for boosted nutrition and blood sugar control, it is a seriously NUTRITIOUS treat. The texture is almost the cross of a scone and muffin, and was very popular in my house this week! I hope you try it and love it too :)

Recipe makes 8 scones.

Ingredients:

2 cups of fine ground almond flour

2 scoops of your favorite collagen (optional; but gut, skin and bone health y’all)

1 tsp of cinnamon

1/2 teaspoon of baking soda

1/4 teaspoon of cardamom

2 pasture raised organic eggs (golden yolks!)

2 Tablespoons of Maple Syrup

1/2 tsp of vanilla extract

1 pluot- or any other stone fruit! chopped

1/2 cup blueberries or chopped strawberries

Method:

Preheat oven to 350F.

Mix all ingredients well in a bowl.

Place 8 heaping rounds on a baking sheet lined with parchment paper. Don’t worry about making them symmetrical and round, the rough edges make it rustic and get crispy in the oven.

Bake in preheated oven for 15-18 minutes. Until crispy on top and cooked through.

Let cool, slightly, and enjoy with your favorite cup of tea.
